What does it mean to be a whole animal butcher?

We source the finest ethically raised free-range meat directly from local farmers. Having a no-waste mentality, we receive whole animals and break everything down in-house to ensure that we make the best use of the entire animal.

All of our products are made from scratch daily. Our menu is ever-changing to reflect ingredients we receive from local farmers. Emma and Sean have sourced these ingredients with care to create a wholesome, sustainable, and delicious product for you and your family to enjoy.

Are you Gluten Intolerant? TRY SOURDOUGH!

All of our bread is SOURDOUGH! This means that it is naturally-leavened using wild yeast and fermented for an extended period of time. No commercial yeast is needed. Certain fermentation levels result in degradation of gluten and may render bread more digestible for people sensitive to gluten. The quality and freshness of flour used also has a large impact on its digestibility, nutritional value, and flavor, which is why we source 100% of our flour from local mills.

Health Benefits of Sourdough

The enzymes released by the wild yeasts as the dough acidifies effectively pre-digests the flour, which releases the micronutrients and, in turn, reduces bloating and digestive discomfort. Sourdough bread also takes longer to digest; the fermentation process alters the structure of the starches in the bread, resulting in a low glycemic index and can help regulate your blood sugar levels. Sourdough is also a prebiotic, meaning it induces the growth or activity of beneficial microorganisms, giving you a healthy and balanced gut. This leads to better digestion and a stronger natural defense system.
